As I said before, the best way of telling if an egg is ok (if you're not sure) is to see if it floats. If it does, you need to be cautious about using it. Just because no one disputes it, doesn't mean it's true (and it's being disputed now anyhow! ).

The majority of eggs here are on shelves within 48 hours of being laid. The date on them can be no more than 28 days after being laid... I've always thought that chickens were pretty intelligent to work out 28 days from a certain day and then stamp the date on their eggs!

Back when I was on a submarine, the eggs would get old and the whites would actually turn green. One time the eggs were green before we even left port. 75 days later we were still eating them. It was better than not eating.

This morning one of the eggs had several small reddish brown specks as I was dropping them in to a bowl to mix up.
What are those? I tried to get them out. Since I was on egg four, I used them anyway.

They're not anything to worry about and the egg is fine...

Yep, what agapetos said.

Eggs produced for supermarkets are usually "candled" before packing - stuck in a machine with a bright light so that the packer can see through the egg - and any eggs with spots are discarded (totally UNnecessarily) because usual townie customer freaks out over them and it puts them off. When you cook them, the spots disappear anyway.

our 20 year old pet chicken Ginger is sick--we brought her in the house-this is our sons pet that made it through the fire--we shall see-- kinda sad but it is a chicken---

The only thing I get at Farmer John is the manure for my sago palms. Man, that stuff is so hot you can grow a palm in one summer. The stuff will burn everything else.

Eggs? When we go to Costco. Pizza, a Hot Dog, toilet paper, toss out plates, eggs, and some frozen chicken products with sauce on em, get some gas and go home. Life is exciting in California.

That is awesome Thanks for posting it!!!!

We got to go visit a friend from here on the forums this past weekend, and she has chickens. So my kids LOVED getting the eggs. Also her parents have two chicken houses that get up to 20,000 eggs a day and then those go to Tyson to become the chicken in the supermarket. So they loved getting to see how that worked and run the conveyors and place the eggs into the holders. They learned a lot...such as, the eggs have to be small side down or they won't hatch. So they had to be careful how they put the eggs into the holders. My kids have decided that we want chickens...lol. If only we had the land to do so, and if only we weren't military and have to move so often. I would LOVE to have some...lol. Maybe one day!!

I used to love to help my aunt do her eggs. I wasn't much on going in the chicken house to gather them, but I liked to help sort them. She had one of those balance scales that showed which size they were. For some reason, I liked weighing them and putting them in the proper boxes.

My mom tells a story of the chicken coop they had when she was a girl.

She went into the coop to gather the eggs. The chickens had nests made out of wood. What she found was a snake. The snake had crawled into a nest and swallowed an egg whole.

Then it crawled into the next nest through a knot-hole in the wood. Then, it swallowed another egg whole. There was where she found the snake, stuck in the knot hole with an egg on either side.

Not the smartest snake.
