Does anyone know why bay leaves are an ingredient found in most soup recipes? I'm just curious. You don't suppose it's because someone's great-great-great-grandmother always did, do you?

Absolutely, but I'd recommend you stay away from Elm and Maple... think more like thyme ans sage.[;)]

Whoever gets the bay leaf in their bowl is the one who has to do the dishes. That's what I always though it was for. LOL

I am pretty sure my grandmother thought the sharp leaf could cause bleeding if swallowed and thereby cause death. I'd ask her, but I'm not up for the lecture and melodramatic worry session. [sm=hammerhead.gif]

Just buy a jar of bay leaves and be done with it! [;)] You sound like me, asking why!

THIS SITE says to use thyme. But since you're out of that, too, I think you just need to run to the spice store!

Fresh is better... I have a small tree in my garden ~ whenever I want some bay, I go out and pick it! Or thyme, sage, parsley, basil, tarragon, rosemary, curry plant... [;)]

If you're not sure why you put it in, try leaving it out altogether and see how it tastes![:)]

From what I've read, they're pretty hardy. There's a greengrocers in my town who order 1 bay tree at a time and keep it until it sells, then get another! One, they had for a couple of years and they would put it outside when the shop was open so it was used to all weathers! I thought about getting one of them, but they were so expensive...

Oddly enough, I bought mine (smaller, but much cheaper) from the American Museum in Bath (I wanted to see the Titanic exhibition more than anything) when I went with my family in the summer!

I've got a couple soup recipes that are really quite good. I've never tried them without the bay leaf and I'm not so sure I want to risk it. I don't want to taste it and go "hmmm, something's missing" [&:]

I've said that before... but then I'm fussy enough that I can tell the difference when I use ordinary thyme instead of lemon thyme in a soup that I make. It's ok, but it just ain't the same...[&:]

They do actually add a very subtle spiciness. I use them in my tomato sauce and my sister doesn't, and I can tell that they're missing. I don't have the luxury of having a laurel tree growing in my apartment complex, so I have to use dry ones.
