Does anyone have any tasty ground beef recipes to share?

I make my own beefaroni using a pound of ground beef, 2 quarts of tomato sauce, and around half a pound (give or take) of cooked macaroni.

I also make tacos with it. And meat loaf, but mine isn't all that great.

Tonight we're having nachos--chips, ground meat, cheese, and jalapenos, layered and microwaved just long enough to melt the cheese.

Spaghetti Pie

8 ounces spaghetti, cooked and drained
1/2 cup parmesan cheese, grated
1 egg, lightly beaten
1 pound hamburger, cooked and drained
2 cups spaghetti sauce
1 8 os. pkg. mozzarella cheese

Toss cooked spaghetti, parmesan cheese and egg. Place in 9 inch pie plate. Press along bottom and sides to form crust.

Mix cooked meat and spaghetti sauce. Spread mixture over spaghetti crust. Sprinkle with mozzarella cheese.

Bake at 350 for 30 minutes or until thoroughly heated. Let stand 5 minutes before cutting into wedges.

MOCK CHOW MEIN


500g (1lb) minced/ground steak
2 onions, chopped
2 tablespoons butter
3 tablespoons uncooked rice
3 stalks celery, chopped
1/2-1 cup shredded cabbage
3 cups water
1 packet chicken noodle soup
1/2 cup frozen peas (optional)

Fry onions in butter. Add other ingredients and simmer gently 30 minutes.

stuffed bell peppers
open faced sandwiches
burgers on the grill
salisbury steaks/gravy
sloppy joes burritos
oven chimichangas
hamburger/veggie soup
chili
taco salad
lasagna
sweet/sour meatballs
beef noodles
hamburger mushroom rice
beef stroganoff
chili mac

I can post the recipe to any of those if any of them sound good!

One of our favorites (we call it cabbage skillet):

Brown 1 lb. lean hamburger with onion. Add one or two cans of Rotel, drained, and one small head cabbage, sliced into ribbons. Heat, covered, until cabbage is tender. Serve over rice.

Easy, healthy, and delicious (tastes like cabbage rolls but without the work). [:)]

Here's something completely different for you.

AFRICAN CURRY


750g (1 1/2 lb) minced/ground steak
1 large potato, sliced
1 large cooking apple, sliced
1 large onion, sliced
2 tablespoons oil
2 teaspoons curry powder
1/2 teaspoon turmeric
1/2 cup vinegar
1/2 cup sultanas
1/4 cup chopped almonds
salt
1 teaspoon sugar
1/2-3/4 cup apricot jam/jelly
4 bananas
1 egg, beaten
1/2 cup milk

Brown meat, potato, apple and onion in hot oil, add curry powder and turmeric and stir well. Add vinegar, cover, and simmer very gently about 30 minutes, or until well cooked. Add sultanas, almonds, salt and sugar. Stir well and put in shallow casserole dish. Spread jam/jelly thinly over top. Cut bananas in halves lengthwise and place on jam/jelly. Mix egg and milk and bake at 350F (180C) for about 30 minutes or until browned.

EASY MEATLOAF

2 rashers bacon, chopped
1/2 packet French onion soup
250g (8oz) ricotta cheese

Mix ingredients together until cheese is absorbed into the meat. Bake in meat loaf tin in moderate oven for about 1 hour. Serve hot or cold.

GREEK SHEPHERD'S PIE


Serves: 4
Prep: 20 minutes
Cook: 30 minutes

1 kg (2lb) pumpkin, peeled and coarsely chopped
salt and pepper to taste
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, crushed
500g (1lb) ground beef
1 tablespoon Greek seasoning
1/2 cup pitted kalamata olives, finely chopped
2 tablespoons finely chopped fresh oregano
200g (7oz) block feta, crumbled
1/2 cup finely grated pamesan
baby rocket to serve

Grease an ovenproof dish (8 cup capacity)
Boil, steam or microwave pumpkin until tender. Drain. Mash. Season with salt and pepper.
Heat oil in a large saucepan. Add onion and garlic. Cook, stirring occasionally, until onion is soft. Add beef and seasoning. Cook, stirring until beef changes colour. Add olives and oregano. Stir to combine. Season.
Spoon mixture into prepared dish. Sprinkle feta over beef. Top pie with pumpkin. Sprinkle with parmesan.
Cook uncovered in a moderate oven (180C or 350F) for about 30 minutes, or until hot.
Serve pie with rocket.

Tip: Pie can be made 2 days ahead. Reheat before serving.

CORNISH PASTIES


500g (1lb) short crust pastry
500g (1lb) lean minced/ground steak
1 large potato
1 carrot
1 turnip
1 parsnip
1 onion
3 sprigs parsley
3 tablespoons peas
salt and pepper
milk for glazing

Finely chop vegetables (except peas) and parsley, or mince coarsely. Add peas and meat and mix well. Roll pastry and cut into circles (an upturned saucer is useful for this). Re-roll any leftover pastry and make more circles until all pastry is used. There should be about 16. Place meat mixture on half of each circle. Dampen edges of pastry and fold over. Using a fork, press around edges and **** tops several times. Brush with milk. Bake on greased tray at 425F (220C) for 25 minutes, then turn down to 375F (190C) and bake for another 25 minutes or until cooked and brown.

Biscuit-Topped Beef & Potato Casserole


2# browned beef drained
4-5 Potatoes cut up, boiled
any vegetables, cheeses and/or seasonings

Place all in large casserole dish.

Place on top of casserole these easy-to-make biscuits:
1/2 cup butter, melted;
1 tablespoon sugar;
3/4 cup milk,
2 cups self rising flour-or little more if needed;
stir, then shape into 8 biscuits

Cook in a preheated 450 degree oven for about 20 minutes until biscuits are golden brown.

I make bite size meatballs. Any typical recipe will do, but I add grated parmesan cheese (my "secret" ingredient), finely chopped garlic (I use a lot of garlic) and a little fresh chopped basil. Very delicious - and addictive!

BEEF PIE CRUST


500g (1lb) minced/ground steak
1 egg
1 cup soft breadcrumbs or rice
3 tablespoons tomato sauce/ketchup
1 tablespoon chopped parsley
1 small onion, chopped
1/4 teaspoon mixed herbs (optional)
salt and pepper

Combine all ingredients and press into greased dish. Bake in a moderate oven for about 30 minutes.

Filling for Crust

1 cup cooked rice
1/2 cup shredded cheese
salt and pepper
1/2 cup chopped celery
1/2 cup chopped red pepper
2 tomatoes, peeled and chopped
extra cheese

Lightly mix all ingredients together and spoon into pie crust. Sprinkle a little cheese on top. Bake a further 20 minutes.

This sounded interesting but I had to find out what Rotel is. I GoodSearched it and first found an audio system. Huh? THEN I found the right sight. I'm guessing if this product is available in SD it would also be available in MN. Is it in the Mexican food section? I'd like to try this.

Trish - You have some interesting recipes that are a bit different from my usual. I want to try that African Curry but.... maybe I'll try making a smaller amount. The jam and bananas kind of scare me. :) What are sultanas?

Hamburger and Vegetable Hot Dish or Hamburger Stew

6 medium potatoes, sliced
1 layer raw carrots
1/2 c cooked rice (or instant)
1 lb ground beef, browned
1 layer onions
1 can cream of mushroom soup
1 1/2 cans water
salt & pepper to taste

Place in large casserole in order given. Bake 1 1/2 hours at 350 degrees.
OR place all ingredients in crock and cook 6-8 hours.

Sultanas are a raisin. I think the "regular" raisins you get are Thompsons.

Hmmm. THIS Wikipedia article says that Sultanas and Thompsons are the same. So why do they sell them separately at Bulk Barn? [8|]

Hmmm, so now the raisins jam and bananas make me a little skittish. I'm just trying to reconcile all that sweet in a ground beef recipe. But it still sounds like something I'd like to try. Trish, can I come there and try yours as well? As long as I'm going to imagine being a world traveler. - oops I think that was a different thread-

Sure! I really don't measure when I cook, so I'll try to guess here, LOL

Meatballs:
1 1/2 lbs. ground beef
1/3 c. bread crumbs (or cracker crumbs, or oats will work too)
1 1/2 tbsp. minced onion (I like the dried kind)
Dash of garlic powder or minced garlic
Dash of salt
Dash of pepper
1 Egg

Sauce:
1/2 c. ketchup
1 tsp. vinegar
a good dash of chili powder
a squirt of mustard
sugar to taste
another dash of minced onion

Mix all meatball ingredients first, shape into balls and place in a baking dish. Bake at 350 for about 30 minutes, remove from oven and pour sauce over, return to oven and cook about 10 more minutes until browned and cooked through.

Sure thing! It is different having fruit in your mince (that's what we call ground meats).
