This is a several day process but they're great for conversation. Plus they taste good.

Imitation Spiced Apple Rings

2 gal cored and peeled cukes - cut into rings (I'd say about 1/4" or a little more)
8 1/2 quarts cold water
2 c pickling lime
Let stand 24 hrs - drain & rinse - soak in cold water 3 hrs - drain & rinse
again

Mix and pour over cucumbers:
1 c vinegar (white will do here)
1 small bottle red food coloring
1 Tbsp alum
water to cover - simmer 2 hours and drain

Syrup:
2 c apple cider vinegar
2 c water
8 cinnamon sticks
1 pkg red hot candies
10 c sugar
Heat syrup, pour over slices - let stand 24 hours.

Drain & re-heat syrup every 24 hrs for 3 days. Pack into hot jars & seal or store in fridge without sealing.
If you seal - use boiling water bath 5 min to insure a good seal.
