Ohh, well, the lake had to be a huge treat. We used to go to the lake with our entire family when I was growing up. I mean grandparents, aunts, uncles, and cousins. It was a blast. We would get there early and cook eggs and panckakes on the little tabletop gas stove and stay all day. Lunch and dinner were almost always hot dogs and sandwiches.

Today I didn't cook. I was gone so DH gave the girls something. Jake is by his dad's and I just didn't really feel like eating when I got home. I did just have a granola bar though so that is either dinner or a snack.

I like to make sandwiches for dinner though. I buy different types of cheese, lunchmeat, lettuce, tomatos, mustard (whatever kind sounds good) mayo, and club rolls. Then everybody gets to make whatever kind of sandwich they want, and the leftovers are used for lunch for the rest of the week. It works out great.

Last night we had Taco Bueno. I LOVE Bueno.

Today after church we're having shredded BBQ chicken sandwiches and chips. I cooked the chicken overnight in the crock pot. It's too hot to cook.

Hubby is going to camp this week. I'm going to experiment with Weight Watchers recipes while he's gone. Thinking of trying General Tso's chicken tonight.

LOL, I did my pork about a month ago and then used the foodsaver. We had a really huge sale so I stocked up on pork roasts, sirloin tip roasts, extra lean ground beef. and a whole bunch of other stuff.

I separated the beef and made meatballs, hamburgers, and just plan packs of beef. Then I did some shredded bbq pork, left some of the roasts whole, and just left the sirlion roasts. I used my foodsaver and bagged everything so I can just pull out what I need when I need it. I haven't had to buy meat since then, and still have enough to keep us going for a while yet.

Oh, and last night I almost sent my DH to taco bell. I was dying for nachos bell grande and a taco supreme.

I ended up making a Weight Watchers Turkey Enchilada casserole. It's from their Take-out Tonight book. I'm guessing it's copyrighted so I can't post the recipe, but you might find the book in your library. It was very yummy, but would be waaay to spicy for my dh. The boys and I loved it though. [:D]

I made Salmon Chowder for dinner tonight. It was the first time I had tried the recipe and it was *amazing!* I used leftover salmon from last night, this is one of the best soups I have ever had and I love soup!

I love it when I try new recipes and they are yummy!

Dh is away. I tried to make one of his specialties - beef stroganoff.

I did something wrong and it really didn't taste the best.

Mind you, that didn't stop the teenage boy from eating not only his full plate but the majority of mine too.

Last night we had stir fry with NY strip steak, snap pea, baby corn, shredded carrots, water chestnuts, mushrooms, and broccoli with lo mein noodles in a soy/teriyaki/burgundy wine sauce (pretty much whatever I had around the house to throw together) Tonight we are using the leftovers in fajitas. I just picked up the lettuce, tomatoes, cheese and sour cream.
Turning it into fajitas was DH's idea, smart guy!

Sure Stacy, this is the recipe I used. I follwed it pretty much exactly, which is rare for me! I did add more carrots and onion and cerelry than it called for but that is because I like my soups to have lots of stuff in them. Let me know if you try it!!

eta: Oh, and I used fresh salmon instead of canned. We are not a fan of canned salmon around here.

We didn't have the BBQ chicken sandwiches yesterday, so we're having them tonight.
