Ok, if you are doing it yourself, it is easy. Sometimes I cheat and buy them from the meat counter, but only when I need a couple and it is cheaper to buy them all done. But you take the flank steak and spread a layer of feta cheese on top, then a layer of spinich. You can put in as much or as little as you want. I like alot of spinich so I pile it three or four layers high, then you roll it up, tie it, and you can bake it whole, or pre slice it, but then each slice needs to be tied. I bake it at 350 for about an hour if the are 2 inches thick. I wrap in foil so that it can cook in its juices, but sometimes I add salt and pepper, or I season them with some rosemary and thyme. I hope I explained that well enough because it is that easy. Layer, roll, tie, bake.
