Whoa you have a slightly distorted memory of the Russian Ray. I would have explained it in a more appropriate thread had someone asked. But I just HAD to say it.

ETA - PS: And the Russian Ray was long distance mind control for whatever thing "everybody" seemed to be doing.

HA! Glad you explained it, Tricia, cuz I sure didn't know what she meant by it!

Joyful, thanks for the information for an even lighter syrup. I made note of it...when I was doing the quarts I had to guess at how much syrup to make. I ended up throwing some away.

Ok, I will explain the Russian Ray here once and for all...

Part 1: In the late 60's when Friend Hubby was in the Navy and in the Mediterranean they spent days just sitting staring at a Russian ship that did nothing but stare back at them. Except there was this one light on the Russian ship that never went out so the guys "decided" it must be a sterilizing ray.

Part 2: In the early 70's they had some story on the news about the Russians experimenting with long distance mind control.

Part 3: About the same time a friend and I decided that a lot of people were tired at the same time we were, or a lot of people were grumpy at the same time... our husbands were , or whatever phenomenon seemed to show up a lot.

So we put two and two together and came up with the Russian Ray. Hey, it was nice to have SOMETHING to blame. And, as you can see, I still use it to this day.

Now, back to the previously scheduled thread that I apologize for hijacking!

Tammy, you can always save the extra syrup in the fridge for another batch of fruit.

Iowa Corn Relish

20 ears sweet corn(2 and 1/2 quarts kernels cut from cobs)
1 cup chopped green pepper
1 cup chopped sweet red pepper
1 and 1/4 cup chopped onion (4 medium)
1 cup chopped celery
1 and 1/2 cup sugar
1 and 1/2 tablespoons mustard seeds
1 tablespoon salt
1 tsp. celery seeds
1/2 tsp. turmeric
2 and 2/3 cups vinegar
2 cups water

Boil corn 5 minutes. Plunge into cold water. Cut kernels from cob; measure.

Combine all ingredients; simmer 20 minutes.

Pack into clean, hot pint jars, leaving 1" head space. Make certain vinegar solution covers vegetables. Adjust lids. Process in boiling water bath(212 degrees F.) 15 minutes.

Remove jars from canner and complete seals unless closures are self-sealing type. Makes 6-7 pints.

Looks like I'm going to do bread and butter pickles today. Anybody else do those. I follow my grandmother's recipe passed on for who knows how many generations!

Still offering up the recipe for those big ripe cucumbers that you find hiding on the vine under the leaves and they've started to turn yellow. Makes great relish! Anyone interested?

THANK YOU! This corn relish recipe looks right up my alley!! The only other one I found somewhere was for "sour" relish. Didn't feel the family would enjoy that one. Friend Hubby is picking up corn today so I'll be using this recipe tonight!

Yes, I definitely do bread & butter pickles. I used to do pints for Friend Hubby and myself but I put a lot up in quarts this year because we'll use most of one for each full-family dinner! I suppose I've been using the same recipe for at least 25 years as well. But, alas, mine is personally tweaked from a book.

It has been quite a few years since cucumbers have had a chance to turn yellow in my garden so maybe someone else would enjoy that relish recipe. Of course... it never hurts to have a good one on file if you would like to post.

Does anyone (besides my mom) have a good salsa recipe for canning? All I can find are fresh salsa recipes.

(I'd love to make my mom's, but it's got a TON of ingredients, LOL!)

OK, after I said I was keeping on top of the cucumbers in my garden I suddenly came to a screeching halt on that ability. I will possibly be able to get out there this evening but I KNOW what is lurking there! Huge cucumbers!

SO, momma-mo, since you're corn relish recipe is so wonderful would you go ahead and post the recipe for your overgrown cucumber relish?

Ok, I just ordered 25 lbs of tomatoes from our co-op. We're picking them up on Saturday. I've never canned before, don't have any canning jars, but am now thinking about possible ways of preserving that many tomatoes. We're thinking of spaghetti sauce and salsa- either canning or freezing.

Ideas?

If you've got the freezer containers and freezer space, I say go for it! I did my first ever salsa yesterday - canned it via pressure canning, my first ever pressure canning. It took a LOT longer than I was expecting!

Ratatouille is very good to freeze if you have other veggies. I use bell pepper, zucchini, eggplant, I'll probably throw in some cucumbers, onions of course and garlic cloves.

Gee TA, it sounds much like my salsa except for the consistency and minor changes!

I like to freeze this then fry up some hot Italian sausage to add when I heat it. I usually serve it with some sort of macaroni product.

You should ALWAYS blanch whatever vegies you are freezing--if you dont blanch they loose all the nutrition value----plus realize that leaving the skin on is fine but when you cook with them the skins will float and seperate from the tomato and your kids might not eat spagetti sauce that way--I always put mine in a pot and bring to to a boil then use my hand blender to grind it all up, add the spices and either can or freeze--then its ready to dump and use--think of how you wnd your kids will eat them or all your work is for naught!! A little wrk now saves time later

PEARS
I just ran across an old clipping for "Pear Honey" that looks kind of tasty.

12-14 medium ripe pears, peeled and cored
8 cups sugar
1 can (20 oz) crushed pineapple, undrained
3 tablespoons lemon juice

Puree the pears in a food processor or blender; pour into a large kettle or Dutch oven. Add remaining ingredients; bring to a boil. Reduce heat; cook and stir, uncovered, for 50-60 minutes or until thickened. Remove from the heat. Pour hot into hot jars, leaving 1/4 inch headspace. Adjust caps. Process for 20 minutes in a boiling water bath. Yield: 12 half-pints.

Personally I would consider playing with the amount of sugar. This clipping looks to be printed before people started using less sugar. The photo shows it served on pancakes.

It's not a recipe but maybe a tip -

During canning season, if you walk into my kitchen you will find old sheets spread out in my work area. I find it much easier to take up the sheets than keep mopping the floor.

Someone had pears for offer on Freecycle. I was tempted to get them and can them, but then I thought of ALL THAT WORK, LOL!

Of course, the location was quite a distance away (a good 40 minute drive one way), so that also factored into it.

Yep THAT sounds like an excuse. You'd better stick with "ALL THAT WORK"
