Charity, any chance you're in Mississippi or Alabama? I'd take you up on the jars in a heartbeat! My sweet aunt looks for them for me...but I still need more.

I'd love to have a canning get-together. I think most of us span the continent though.

I've been trying and trying to find jars at garage sales or second hand stores with no luck.

Anyone know of a good place to get them new? I think I've bought 1 dozen at Walmart and another dozen at a hardware store. Neither seemed that cheap (I guess I'm thinking of the prices in bulk too).

This will probably be a big year for me. Last year we just finished off the dozen jars in a month (applesauce..yum).

Tamara, the only other place I can think of is freecycle. However I haven't seen any there in our area. Oh, try word of mouth. You'd be surprised at the people who gave me jelly jars when they knew I canned. It seems older folks have those sorts of things but many are unable to use them. They would rather pass them on to someone who will use them. Good luck!

I'm in the process of looking for some pint and quart jars. I have tons of jelly jars.

You could also check grocery stores - some have them, but WalMart is probably less expensive (though probably not by a whole lot). Prices in general have gone up. I remember when they were waaaaaay cheaper!

Lids used to be waaaaay cheaper too!

Another place to look for jars might be a second hand Thrift Store. Especially if they're in rural areas.

If anyone lives near Minneapolis I have a cardboard barrel full of quart jars for the taking. I acquired them when someone was cleaning out their parents' home and I have plenty of my own so I don't need them.

Bummer! I don't live near either of you.

Garage sales and estate sales sometimes have them, or so I've been told. I'm not out in the sticks anymore (everything is growing up around me) so I haven't noticed any around here, but the more rural areas oughta have some. Just make sure there's not chips or cracks in the jars.

Perhaps it's time to bump this up. Plus I'm looking for a "favorite" corn relish recipe to can. Any out there?

Also looking for ideas with the loads of basil my garden is producing. (I started a thread for this).

I finally got some jars. A lady out in the country was selling some she had inherited on Craigslist. I may have overdid it.

Anyone canning right now? We made some dilly beans but dh said not to bother to process them because he would eat them all.

Over done it, on canning jars? How can that be? lol What sizes did you get? Ok... and how many????

I've only had a handful of purple snap beans twice so far so I'm not doing them yet. But today I plan to do my first batch of Bread & Butter pickles. My wonderful Japanese cucumbers are finally getting productive! These cukes are so cool. They have good flavor and although they curl up when they grow, they're a nice diameter and make a really cool looking pickle slice. The slices are not round but have what I'd have to call peaks and valleys down the sides.

I checked my stock from last year and OHMYGOSH, there are 3 pints of applesauce, 3 of pears, 1 qt and a pint of Italian plums and a few of pickle relish. THAT's IT!! I don't know when my canning shelves have ever been so empty! Oh, and a very few jars of jam.

Hmmm, sounds like a nice healthy stock to me.

As mentioned before, especially with used jars, just be sure to check all those rims when you go to wash them up to use. No sense getting ready to put the lid on and THEN discovering a chip.
If you're interested in what works for me for storing all those jars I'll say. But if you've got a great storage idea already I won't bore you with the details.

We have some shelves in the basement that a former tenant used for canning (there's even an ancient stove down there although I know my husband would have a heart attack if I ever canned down there). I cleared them off and stuck most of them in there. I probably have 5 more dozen in boxes in various parts of the house (in the cupboard under the oven, on the gardening shelf, etc.).

When we move though I'm going to need your suggestions.

I put up 11 quarts of pears. I know it's not much...but I was pretty proud given that I have an infant and I've never canned pears before or used quarts. Took me all day but I did it! I get excited about small victories, can you tell?

I totally agree! Pears can be very time consuming. Sounds like you're doing a great job to me.

I did 18 PINTS of peaches yesterday but cheated and processed them in my double stacked (pressure without the gauge on) canner. They all got processed in one load.

Somehow I feel like I cheated buying peaches that were on sale cheaper than the case of "canning peaches". Plus I can hardly remember the last time I BOUGHT fruit to can. I've just been doing the pears, apples, plums, and crab apples from my yard. But the peaches looked soooo good. And boy did Friend Hubby smack his lips when he saw the jars cooling on the counter!

OH, this thread is called Canning Recipes.... ummm... I use a light syrup when I can peaches and pears. There, does that work?

Joyful, what sugar/water ratio do you use for pears and peaches?

I used the one in my Southern Living cookbook (actually less sugar than they suggested) and they turned out too sweet for me. But then I think pears are sweet enough on their own.

For pears I generally use light syrup 2 cups water and 1 cup sugar makes about 2 1/4 c syrup.

For the peaches I chickened out and went about 1 1/4 cups sugar in the 2 cups water. Like I said, I haven't canned peaches in years and the last home canned peaches we had were from my sil who used a very light syrup and they needed just a bit more. Unfortunately I don't know what her ratio was.

According to my notes a medium syrup is 1 1/2 cups water and 1 cup sugar making about 1 3/4 c syrup

And I personally don't see any use for heavy syrup but it is listed as 1:1

My notes say to allow 3/4 to 1 cup syrup per quart. And, of course, leftover syrup can be stored in the fridge for another batch.

A canning recipe for success with keeping rings longer.

I want to mention to those new to canning that you can / should remove the metal rings after the jars have sealed. Wash and dry them for future use and they will not rust nearly as quickly as leaving them on the jars. I also use older rings or lids from other types of jars with the right thread pattern for jars that I've opened and am storing in the refrigerator. This also saves on the good rings.

Some people think you need the rings to keep the lids sealed. Not so. A good seal will hold itself. Lids come loose from loss of vacuum inside the jar through either a bad seal or food that is spoiling. If a jar has a poor enough seal that it won't hold in place by itself do you really trust the food in that jar?

Another thing - if you check your newly canned product each day for a couple days and find that a lid does come loose due to a poor seal, you should be able to salvage the food inside. And, of course, do a quick check of all your jars periodically to be sure lids are sealed. Just a quick tap or visual check looking for lids that are no longer sunken in. This could save you some bad smells or even mess from spoiled food oozing out of a jar.

Joyful, I used two cups of sugar to 4 cups of water and it was way to sweet for me (though hubby likes it!). Next time I'll do one cup of sugar to 4 cups of water and see how that is (hubby can add more sugar to his own serving ).

Thanks for the ring help! I went to a friend's house who had numerous quarts of pears that she showed me and none of them had the rings! It looked weird but then I figured that the rings really weren't necessary after they've been processed and sealed. So, good idea!

Ouch! I think I need to revise those notes in my old canning book! I looked in my computer recipe database and found a record from 2004 that said I used 10 cups of water and 2 1/2 cups of sugar for 8 pints of pears. It also said I used 14 cups water with 3 1/2 cups of sugar for 7 quarts. OK, that would be a 4 water to 1 sugar ratio. I think my peaches are going to be sweet!

Definitely can't trust my brain any more! Either I'm getting old or it's the Russian Ray but either way I don't like it. And I have now made that notation in my canning book!

Cool, except for the one gardening website I saw yesterday, I haven't known anyone else to remove the rings before I mentioned it. It's good to hear there actually are others out there.
