Italian Plums!!! Does anyone have ideas for Italian Plums????? I picked just two small branches and have a sinkful. I am going to can these in light syrup. I've tried making jam in the past but it comes out with prune flavor seeing these are the plums that dry into prunes. Maybe I'll try prunes again as well. Help, I need ideas! Anybody living south of the Twin Cities want plums?????

joyful, I have never tried the pear honey recipe but it sounds so interesting (and something df would love!). Here's the recipe: Pear Honey II Serves/Makes: 5 pints Ingredients: 4 cups peeled, crushed pears 6 cups sugar 1/2 teaspoon salt 2 lemon or orange, ground up Directions: Combine all ingredients, and cook in a heavy pan, stirring occasionally, for about 15 minutes or until it reaches a spreading consistency. Pour into hot sterilized jars and seal.

It wasn't Pear Chutney I was going to make it was Pear Relish. I messed up typing. LOL Peach or Pear Chutney 4 quarts finely chopped, peeled peaches or pears (about 20 medium) 1 cup raisins 1 cup chopped onions(about 1 medium) 2 to 3 cups brown sugar 1/4 cup mustard seed 2 Tablespoons ginger 2 teaspoons salt 1 clove garlic, minced(optional) 1 hot pepper, finely chopped 5 cups vinegar Combine all ingredients in a large sauce pot. Cook slowly until thick, about 40 minutes. Stir frequently to prevent sticking. Pour into hot jars, leaving 1/4-inch head space. Adjust caps. Process 10 minutes in boiling water bath. Yield: about 7 pints. Pear Relish(What I was really going to make) 10 1/2 pounds pears, peeled, cored and chopped 6 cups chopped onions(about 6 medium) 6 cups chopped sweet red peppers( about 6 medium) 6 cups chopped sweet green pepper(about 6 medium) 1 bunch celery, chopped, discard leaves and coarse stalk 3 cups sugar 1 Tablespoon allspice 1 Tablespoon salt 5 cups vinegar Combine all ingredients and let stand overnight. Bring mixture to a boil. Pack into hot jars, leaving 1/4-inch head space. Adjust caps. Process 20 minutes in boiling water bath. Yield: about 9 pints. charity, post your tomato salsa recipe, if you don't mind. I've been looking for a good one to can. I made 14 jars of pear honey. I know, that's nothing compared to what you all are doing! It's very yummy! I was drooling standing over the stove because it smelled so good. Hubby loves it. When he first saw the jars, he said, "Well, we'll have pear honey for awhile." I explained that I'll end up giving some of it away. Then after he ate almost 1/2 a jar himself at one sitting (with homemade biscuits ), I said, "Uh, I don't think it will last us very long at all."

my salsa recipe is-- chunk some paste tomatoes,chopped peppers, green peppers, red peppers, cubaella, jhlapeno ,chopped onion,chopped cilantro, ,garlic----now all this depends on how many tomatoes I had a peck of tomatoes, and uses 4 very large green peppers, 4 large cuebaella, 6 large jhlapeno, about 3 -4 cups onions, 2 TLB dried garlic, about a cup of cilantro, and 2 large limes juiced, and I cut some of the meat of the lime and put in it also-----I peel my tomatoes by dipping in hot water--as i peel them I put them in a colander over a large bowl, this lets some of the juice drip out so you have thicker salsa--I also can the juice for soups--I mix and bring to boil--only for for 10 min--turn off heat fill jars and process for 15 min in pints---the hot peppers and cilantro are add for your taste---I like allot of peppers and onion so I mix according---I just read the salsa bottle and went from there--oh I dont add salt or pepper but you can---

Well anyone still canning?? I think Im done finely--that is if no one brings me anything else to can!! My shelves sre full Praise the Lord for all the vegies I was given!!
